A great way to fool your kids into eating cauliflower in a way they’ll ask for more! (wink wink) Or reduce your carbs and enjoy a tasty side dish.
1 – 16 oz bag frozen cauliflower (directions at bottom for fresh cauliflower)
1/2 c. shredded cheddar and Monterrey jack cheese
1/4 c. sour cream
2 T. butter
1/4 t. pepper (I add more)
1/4 t. seasoned salt (or season however you wish)
top with chopped chives or green onions
**you could also play around with adding celery salt, garlic salt, onion salt, etc.; whatever suits your family’s taste buds.
Place cauliflower in microwave-safe bowl. Cover and heat on high 8 minutes. Stir in remaining ingredients and microwave 3-4 minutes until tender. Whip with beater until smooth or put in food processor 30 seconds.
*If using FRESH cauliflower, clean medium head and cut into small pieces. Boil on stove 6 minutes. Drain, mix in other ingredients and heat thoroughly – whip with beater.
