GYPSY BREAD

This recipe creates a moist, delicious bread with onion and dill seed.  It can be eaten alone, with your favorite spread or dip, or for gatherings, you can carve a bowl into the center and put your favorite dip, or even marinara.  YUM!

2 pkgs dry yeast
1/2 c. of warm water
2 c. SMALL CURD cottage cheese
4 T. sugar
2 T. Instant Minced Onion
2 T. butter
4 t. dill seed
2 t. salt
1/2 t. baking soda
2 eggs
5 c. all purpose flour

Put both pkgs of the yeast into the warm water.

While that’s doing it’s magic, in a large bowl, combine all other ingredients except the flour.  Then add the yeast and blend in.

Add the flour, a bit at a time to form a STIFF dough, beating well after each addition.

Cover.  Let rise for at least an hour.  Stir down dough and divide.  Place each half of the dough into a greased 8 or 9 inch round cake pan, let rise until light.

Bake at 350 degrees for 25 min. if using a dark pan.  If using a thicker casserole type dish, baking may take longer.  Check with a toothpick for doneness.

Brush with butter after removing from oven, sprinkle with coarse salt.

Makes 2 round loaves.  (Freeze one after cooled if desired).
