Burgers with Balsamic Glazed Vegetables

OK….tonight was night 2 of our 30 day meal plan and after last nights Kabobs, I wasn’t sure if Tastefully Simple could match it….

Well, they did.

I’m REALLY loving their Pomegranate Balsamic Vinegar of Modena.  It gives foods such a tangy yet sweet flavor – just incredible.  You can SERIOUSLY Wow your friends this summer with this recipe!

This Tastefully Simple recipe requires a grill, but because it was raining here pretty hard today, I had to improvise and it turned out amazing anyhow.  I’m giving you the recipe as I made it just in-case you can’t grill either:

On with the recipe:

  1.  Have a George Foreman Indoor Grill?  As for me, I used the Cuisinart Griddler.  Start heating that up – medium to high heat.
    In lg. bowl, combine 1.5 lbs lean ground beef, 1.5 t. of Garlic Garlic Seasoning, and 1 packet TS Grilled Veggie Dip Mix…  (this stuff smells so awesome, like either a herb-y ranch or a southwest ranch – somewhere in the middle there).  Also, salt and pepper – your choice on how much.
    Form into 6 hamburger patties.
  2. Preheat oven to 350 degrees.
    Grab a cookie sheet, line with aluminum foil.
    Slice horizontally a (cleaned) large red bell pepper, (slice thin, then in half).
    Then thinly slice a medium red onion.
    Scatter both around the cookie sheet, and drizzle with 3 T. Olive oil, and 1/4 c. of the Pomegranate Balsamic Vinegar of Modena  (link above).  Again, salt and pepper as desired.
    Place in preheated oven for about 15-20 min (or until tender).  (The TS recipe calls for an 8 oz pkg of sliced, fresh button mushrooms as well, but since we don’t care for them, I left them off.)
  3. By this time, your indoor grill should be good and heated.
    Place burgers on grill – check directions of your machine for burger making – make sure burgers are at least 165 degrees in the center.
  4. Top the burgers with a slice of provolone cheese when done cooking (6 slices of cheese)  Pull veggies out of oven, place desired amount on top of burger with bun.  Yields 6 servings.

The flavor of the burger with the seasonings, along with provolone, and add the sweet and tangy flavor of the vegetables – it makes for a crazy good burger.  We didn’t put ketchup or anything on ours at all.  Just DELICIOUS!

**If you wish to grill all this using an outdoor grill, you can wrap the veggies in doubled foil, folded up to make a tent, then fold the edges down together, then sealing up the ends and placing over the flame with your burgers.
